Banana bread

Before I began my raw journey, one of my big guilty pleasures would be banana butties, I think it could be a Northern habit, because I’ve never really experienced it anywhere else. As a young girl I can remember my Mum and I would settle down with a cup of tea and a banana butty for a good natter.

The banana bread I make now is every bit as good as that and each time I eat it all those childhood memories flood back.

Banana Bread

  • 1 cup sunflower seeds, ground to a flour in a processor or coffee grinder
  • ½ cup of organic oats, ground to a flour in a processor or coffee grinder
  • 6-8 ripe bananas
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • A pinch of Himalayan sea salt

Mix all the above together in a food processor. Then spread evenly on a teflex dehydrator sheet with a palate knife until all ingredients are even. Score into even squares and pop in the dehydrator for 5 hours, flip over onto another  dehydrator tray and cook for a further 2 hours.

I like to serve this warm out of the oven and layer with cashew and lucuma cream
