Superfood muesli

A fantastic blend of jumbo oats, with bee pollen, goji berries, cacao nibs, coconut flakes, raisins, flax seeds and sunflower seeds. This superfood breakfast offers an amazing start to anyones day, packed full of densely nutritious foods, high in slow releasing protein, that stops you snacking before lunch.

  • 4 cups of organic jumbo oats
  • 1⁄2 cup of raisins or sultana (optional)
  • 1⁄2 cup of Bee pollen
  • 1⁄2 cup flaxseed also called linseed
  • 1⁄2 cup sunflower seeds
  • 1⁄2 cup cacao nibs
  • 1⁄2 cup pumpkin seed
  • 1⁄2 cup cashew nuts
  • 1⁄2 cup flaked coconut

Mix this in advance and you’ll have enough here for 2 weeks, pop in an air tight container.

Each morning have a small bowl, with blueberries and half a chopped banana over the top, rather than using milk, mix with the almond milk or hemp milk. For an alternative I use vita coco water, it’s a little sweet in flavour, but extremely rehydrating and a fabulous start to the morning. For an extra chocolate fix, I add a teaspoon of cacao powder, sprinkled over the top of my muesli. It does turn the milk chocolaty, but in a good way!
