What is Raw?

You can’t go in a health food shop these days or pick up a foodie magazine without seeing and hearing all things raw, it seems everyone is "Going Raw"! As a chefI enjoy cooking more raw dishes and especially like teaching people how to cook or not cook this way as it increases our health, to me this is not a diet or a fad, merely another style of preparing our food, a healthier way and one that I try to do more often than my old traditional ways of cooking.

So why the phenomenon? Why are so many people intrigued by eating raw food? The answer is simple, globally we are becoming in tune with what nature provides us, we are turning to healthier options to clean up our health and taking control of our food choices.

With the use of organic fresh vegetables, fruits, nuts and seed, fabulous creations such as courgette and sun blushed tomato spaghetti, pecan pancakes and raw lemon cheesecake can be created without the use of stabilisers, flour bleached just to aesthetically please our eye or being dairy laden with hormones. The imperfections of organic natural food allows us to create perfections in our nutritiously dense dishes. It’s been clinically proven that organic foods offer more nutrients than GMO crops and foods grown in pesticides.

The use of the word raw is due to the cooking process. Traditionally we cook our food at over 48 degrees C/120 degrees F and during the heating process the natural enzymes of the fresh food are depleted by up to 80%. The art of raw cooking is to prepare the food at 48 degrees C/120 degrees F or below and thereby retain the nutritional value.

Through eating a diet increased in raw food you can experience a clear, bright, luminous complexion, enjoy natural weight loss (and retain it), enjoy glossy hair (no grey) and sparkling energised eyes.

External benefits aside, what really makes a difference is that internally we have heaps more energy which is great for productivity. We can enjoy increased confidence, an improved immune system and can continually strengthening our body against chronic disease.

An increase in eating raw offers great benefits for people suffering from diabete, or from lactose or gluten intolerances. It also aids symptoms of IBS, chronic fatigue, arthritis, psoriasis and many other food related allergies.

At Rawchi Living we are simply trying to offer guides and tools to increase your health through the foods you eat, there are no hard and fast rules... "no you can’t eat that as its not vegan... vegetarian... raw" etc. You are responsible for your dietary changes and what we always remind you is:
